The G5 would be really nice as it would be faster at encoding the video, meaning your DVDs burn faster. You'll end up with a much faster CPU, more RAM, bigger hard drive, and dual-layer DVD burner for not much more than you'd pay for a slower Mac mini. But if you're not willing to crack open the iMac, I'd just buy a new iMac G5. If it plays OK with DVD Player the encoding is good. To check the encoding mount the disk image, launch DVD Player and play it. This will separate the encoding process from the burn process. See also Change settings in Photos on Mac.
